Sweet Potato Fries

aaaas a mother one of the hardest things is to find new ways to use vegetables so that my kids will eat them. This is a classic family favorite, one that is simple to do and is always a sure bet with the kids. If your kids (or you!) are pickier than my family, you can sprinkle a little brown sugar on top after you turn the potatoes the first time, but try this recipe first--I think you'll agree that these Sweet Potato Fries are real sweeties all on their own!

Ingredients

1 large sweet potato
2-3 Tbs oil
Salt and pepper, to taste


1. Preheat oven to 425 degrees Fahrenheit.

2. Peel the sweet potato and slice into 1/4"-thick fries (you can make them thicker or thinner if you prefer, but the cooking times will need to be adjusted). Don't worry about them being too even, as it adds to the rustic look if they're uneven.

3. Place fries in a large zip-top bag with oil. Shake until fries are evenly coated.

4. Place fries in a single layer on a large baking sheet. Sprinkle with salt and pepper.

5. Bake for 10 minutes. Remove from oven and turn over; sprinkle new topside with salt and pepper, if desired. Bake an additional 10-12 minutes, until fries are tender. Let cool for 5-10 minutes, then serve and enjoy!
